Saint Valentin

Family Recipe Serves 4 to 5

Cooking time: 15 minutes


250 g almond powder
50 g cocoa powder
225 g powdered sugar
6 fresh egg whites
1 tablespoon of honey
500 g UHT cream
50 g gelatine
100 g white chocolate
150 g candied cherries
Pink and light green almond paste
Candied cherries for decoration


  1. Soak 100 g of candied cherries in kirsh.
  2. Preheat the oven (thermostat 6 at 180°C).
  3. First, mix the almond powder, cocoa powder and 225 g of caster sugar in a bowl.
  4. In a bowl, beat the egg whites and the remaining 75 g of powdered sugar. Add the honey.
  5. Pour the contents of the bowl into the salad bowl and mix everything together.
  6. Spread the preparation on 2 baking sheets 60×40.
  7. Bake for 15 minutes.
  8. In a saucepan heat 100 g of UHT cream, add the white chocolate and gelatin.
  9. Allow to cool, then add the 200 g of cream previously whipped up.
  10. Cut out the cookie sheets in the shape of a heart using a cardboard support.
  11. On the first cookie, pour the white cream, incorporating the macerated cherries cut into small pieces.
  12. Cover with the second cookie and smooth with a spatula the cream on the edge of the cake.
  13. Arrange the halved candied cherries at regular intervals on the edge in the white cream.
  14. Cover the top with the pink marzipan.
  15. Decorate with 3 candied cherries and green marzipan cut into leaves.
